AIRAG: TRADITIONAL DRINK
In summer, when everybody relaxes and the cattle putting on fat, in the herder's ger you will find mares milk fermenting in large hide bags (khokhuur) for airag.
Foaming, tasty airag is an important part of the daily summer diet of Mongolians, and essential for special occasions. Airag for Mongolians, like wine for the viticulturist, is a matter of great pride. The person who makes the best airag becomes famous far beyond his locality.
During Naadam (traditional summer festival), airag is sprinkled on the rump of the winning horse and a cup of airag is presented to the champion wrestler. Mongolians have long believed in the medicinal qualities of mare's milk, saying that it gives strength and cheer, destroys internal pathogenic microbes and helps improve the metabolism.
As a result, the beverage is still on the menu of numerous health resorts. Of course, it would be wrong to say that airag is so popular only because it destroys microbes.
Airag is intoxicating, the more so the more it matures, and many who favor it, especially men, appreciate this quality as an invigorant.
